The recovery process of ‘Talar Foods’ is tumultuous, and the manager, Mehmet Rafet, is trying to demonstrate that ‘Kenar’ has the potential to become much more than just a popular brand of salads produced in the modern factory near Elin Pelin.

Tastings at the “Kenar” salad and food factory are an important part of the process, especially when it comes to testing new high-end products. They take place in a small room, isolated from the production areas, where the temperature never exceeds 8 degrees Celsius. On a long table, there are boxes arranged with three types of preservative-free hummus: natural, sun-dried tomato, and olive. There are also antipasti made according to a German recipe, with a slightly sweet taste in the filling that complements the spicy note in the red mini peppers.
